Born and raised in Victoria, Ashley has spent more than twenty years working in the restaurant industry in just about every role imaginable. Hospitality has shaped who she is, the people she’s met along the way, and her love for the unique energy that only food and community can create.

Today, Ashley brings that same passion into her work as a marketing strategist for restaurants, cafés, breweries, and the broader hospitality world.

Savour Sidney reflects everything Ashley loves about this industry in one place: great people, great food, and a community worth celebrating.

Gillian’s culinary journey began, as many do, working her way through high school and university, where she studied Geography, Aviation, and Communications. During her undergrad, she focused on the geography of food, exploring how cuisine connects culture, environment, and global food systems. She’s returned to the industry in various roles across breweries, taprooms, and diners, deepening her appreciation for the local food scene.

Now based in Victoria, BC, Gillian owns and operates a social media marketing company that helps businesses strengthen their online presence. She’s also the founder of Victoria Taste Buds, a platform dedicated to showcasing accessibility and inclusivity within Victoria’s vibrant culinary community.

Currently, she’s pursuing a master’s degree examining the intersection of food, tourism, culture, and food security in British Columbia.

Born and raised in Sidney, Chef Matt Jackson built his career close to home before taking his skills abroad. Guided early on by local mentor Sarah (from The Surly Mermaid and Five and Dime), Matt went on to cook in Melbourne and later in Michelin-starred kitchens in London.

When the pandemic brought him back to Vancouver Island, he opened Atelier by Matt Jackson to bring something new to his hometown, a blend of West Coast ingredients and refined, French-inspired technique. Now celebrating its third anniversary, Atelier has become a reflection of both Matt’s journey and the vibrant community that continues to support it.
